LARABALLS

Inspired by the original LÄRABAR, these truffle-ish little guys are hard to stop eating... but you can be glad they're a nutritious indulgence!

For 14 balls:

1 c. cashews, preferably roasted

1 1/2 c. shredded, unsweetened coconut

4 T. date syrup

1 t. cinnamon

1/4 t. salt (omit if using salted cashews)

In food processor, pulse cashews into small pieces (slightly larger than the size you want to end up with). Add shredded coconut and cinnamon (and salt, if using) and pulse until combined. With processor on, add date syrup and process just until evenly distributed. Check consistency -- You want a mixture that pinches together easily. Process more for a finer consistency, if desired. Dampen your hands, and roll into balls.

You can easily modify this recipe with other nuts and dried fruit (and cocoa) to mimic your favorite LÄRABAR!
