This one bowl cornbread is simple & a nice cross between the old-fashioned and the sweet boxed brand everybody loves. Sweetened with date syrup & gluten free. Enjoy with baked salmon, chili and other favorites. For an extra special cornbread and our favorite rendition of the recipe, use blue cornmeal in place of yellow cornmeal.
This quick & easy no-bake granola bar recipe is a keeper and sure to be used over and over! It was inspired from this recipe over at Chocolate Covered Katie.
1 3/4 cup flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/3 olive oil
1/2 cup date syrup
2 eggs, beaten
1 large, mashed ripe banana
1/4 cup hot water
1/4 cup chopped walnuts or pecans
Mix together dry ingredients in large bowl. In separate bowl, mix together eggs, oil, and date syrup. Add in mashed banana. Incorporate the wet ingredients and hot water simultaneously into dry ingredients. Gently mix in nuts. Pour into 12-cup muffin tin and bake in 350 oven for approx 17 minutes.
