Banana-Nut Muffins

1 3/4 cup flour 1 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 1/2 tsp nutmeg   1/3 olive oil 1/2 cup date syrup 2 eggs, beaten 1 large, mashed ripe banana 1/4 cup hot water 1/4 cup chopped walnuts or pecans Mix together dry ingredients in large bowl. In separate bowl, mix together eggs, oil, and date syrup. Add in mashed banana. Incorporate the wet ingredients and hot water simultaneously into dry ingredients. Gently mix in nuts. Pour into 12-cup muffin tin and bake in 350 oven for approx 17 minutes.
