What a fun take on carrot cake. These protein bars taste like dessert but have all the benefits of a nutritious balanced snack. I hope you enjoy!

Ingredients

1 cup grated carrots
- â…” cup vanilla protein powder
- 1 cup date paste
- 1 cup rolled oats or ½ cup oat flour
- ½ cup coconut flakes
- 2 tbsp nut butter
- ¼ tsp nutmeg
- ¼ tsp ground ginger
- ¾ tsp cinnamon
- Pinch of sea salt

¾ cup cream cheese
- 2 tbsp date sugar
- 1 tsp vanilla extract
- 1 tbsp avocado oil

Directions
In a food processor, combine all bar ingredients. Pulse until the mixture forms a semi-smooth and sticky dough.
- Press the dough into a paper lined spring form pan. Place in the freezer for 20 minutes or until firm.
Prepare the frosting by mixing the frosting ingredients with an electric mixer until smooth. Adjust the sweetness if desired.
- Remove the bars from the freezer and spread the frosting over them evenly. Slice and enjoy!
