Soft, nutty, and sweetened with a little help from dates. These sesame cookies get their cozy flavor from browned butter, tahini, and our date sugar and syrup. We used black tahini, but regular tahini works beautifully, too.

Ingredients
-
½ cup unsalted butter
-
1 1/4 cup all purpose flour
-
1 tsp baking soda
-
¼ tsp salt
-
¾ cup date sugar
-
1/4 cup date syrup
-
1 egg, room temperature
-
½ tsp vanilla extract
-
3 Tbsp black tahini (regular tahini works fine)
-
2 Tbsp Maple Syrup
-
½ cup sesame seeds
Directions
Brown the butter. Melt ½ cup unsalted butter in a saucepan over medium heat. Continue cooking, stirring often, until golden brown flecks appear and the butter smells nutty. Remove from the heat and let cool slightly.
Mix the dry ingredients. Whisk together 1¼ cups all-purpose flour, 1 teaspoon baking soda, and ¼ teaspoon salt in a bowl. Set aside.
Combine the sweet stuff. In a large mixing bowl, stir together the browned butter, ¾ cup Date Lady Date Sugar, ¼ cup Date Lady Date Syrup, 2 tablespoons maple syrup, 3 tablespoons black tahini, and ½ teaspoon vanilla extract until well combined.
Mix in 1 room-temperature egg until smooth and fully incorporated.
Bring the dough together. Add the flour mixture to the wet ingredients and mix just until no dry streaks remain. Cover and refrigerate for 45 minutes.
Preheat the oven to 350°F and line two baking sheets with parchment paper. Place ½ cup sesame seeds in a small bowl.
Scoop and coat. Scoop the chilled dough into 1.5 TBS portions (or whatever size you prefer), roll each into a ball, and roll in the sesame seeds to coat. Push down lightly as the cookies won’t spread much. Arrange on the prepared baking sheets.
Bake and cool. Bake for 9-11 minutes. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
