Matcha Strawberry Yogurt Clusters

These frozen, creamy red & green clusters are one of my favorite spring treats! They're so visually interesting, and they taste amazing. I hope you enjoy!

Ingredients

1 cup greek yogurt, plain
- 1 cup fresh chopped strawberries
- 2 TBSP date syrup
- 2 TBSP freeze-dried strawberries (optional)
- 8 oz white chocolate, melted
- 1 TBSP avocado oil
- 1 TBSP matcha powder
Directions
Mix together the yogurt, chopped strawberries, and date syrup in a bowl. If desired, pulverize the freeze-dried strawberries in a blender or food processor and add to the mixture.
- Spoon about 2 TBSP at a time of the yogurt mixture onto a parchment-lined baking sheet and place the clusters in the freezer for at least 2 hours.
- In a microwave or a double boiler, melt the white chocolate and avocado oil. Mix in the matcha powder until smooth.
- Dip each strawberry cluster into the melted chocolate, letting the excess drip off before returning it to the parchment. Top with extra fresh or freeze-dried strawberries if desired! Repeat with all of the remaining clusters before returning the pan to the freezer for 30 minutes, or until firm. Enjoy!
