Sweet cherries tucked into a soft, buttery oat crumble make a pretty good reason to turn on the oven. Our date sugar sweetens both the filling and crumble, with sliced almonds on top for a little crunch.

Directions
Prepare the pan: Grease an 8x8 pan. Preheat the oven to 350°F.
Make the filling: Toss all fruit filling ingredients together and allow to sit for 5-10 minutes to set the juices.
Make the crumble: In a food processor, combine oat flour, date sugar, baking powder, and salt. Add the cold butter, almond extract and cold water. Pulse until it comes together, 3-5 minutes. Add the oats and mix to combine. Crumble should be soft but packable.
Assemble: Spread two-thirds of the crumble into the pan and pat down lightly. Spread the cherries on top. Evenly add the rest of the crumble over the cherries. Sprinkle the almonds on top.
Bake: Bake for 30-40 minutes until golden brown. Cool fully before cutting.
