5-Minute High Protein Blueberry Crumble

What a great way to get in some protein when you're short on time-- and it tastes like dessert!

Ingredients

1 cup frozen blueberries
- ½ tsp cornstarch
- ½ tsp lemon juice

â…“ cup oats
- 1 scoop (approx ¼ cup) of your favorite vanilla or unflavored protein powder
- ½ tsp cinnamon
- 1 TBSP date syrup
- 1 TBSP water
Filling
Crumble Topping
Directions
Combine the blueberries, cornstarch, and lemon juice in a microwave safe bowl. Microwave for 1 minute.
- In a separate bowl, combine the topping ingredients. Add the water last, just a few drops at a time until the consistency is crumbly. You can use more if needed.
- Remove the blueberry bowl from the microwave and spread the crumble evenly on top. Microwave together for 1 more minute.
- Top with some greek yogurt, whipped cream, or even some icecream. Enjoy!
