This protein pumpkin spice fudge is delectably chewy and pumpkin spicy, with a honey coconut cream ganache and a sprinkling of cinnamon sugar over the top. This is a refined sugar free recipe, sweetened with honey and Nutrient-Rich Date Syrup. You must eat it. It is a must.

Ingredients

- â…“ cup Nutrient-Rich Date Syrup
- 2 tbsp coconut oil
- ¼ cup collagen peptides or vanilla or plain protein powderÂ
- 1 tsp pure vanilla extract
- 2 tsp pumpkin pie spice
- ¼ cup pumpkin purée

2 tbsp coconut oil, melted
- 1 cup coconut cream
- 1 tbsp raw honey

Directions
Combine all your fudge ingredients together and mix until smooth.
- Tamp down fudge in a parchment-lined bread pan and flatten it out.
- In a separate bowl, combine coconut ganache ingredients.
Pour ganache over the fudge, sprinkling cinnamon date sugar over it, and freeze for 2–4 hours or overnight.
Chop into 10–14 rectangles and enjoy!
