Here’s your recipe for divinely date-sweetened Orange Berry Cobbler, a delicious spring combo that pairs perfectly with some lovely whipped cream.

Ingredients

4 cups favorite frozen or fresh berries

Zest of 1 small orange

1 cup + 2 tbsp gluten-free flour (must include xanthan gum or a starch)

1/4 teaspoon salt

3/4 cup date sugar, divided

1 1/2 teaspoons baking soda

1/2 cup butter or coconut oil

1/3 cup buttermilk
Directions
Preheat oven to 350ºF.
Toss fruit with zest, 1/2 cup of the date sugar, and the 2 extra tablespoons of flour.
Place in a 8X8 inch baking dish or 6 individual ramekins.
Mix the remaining flour, salt, date sugar, and baking soda together.
Cut in butter and mix until mixture forms small pebbles.
Add buttermilk and depending on which gluten-free flour is used, more if batter is too stiff.
Using hands or ice cream scoop, place dollops of topping onto the berries.
Bake at 350 degrees for 25-30 minutes or until topping is lightly browned and berries are bubbling.
Finally, enjoy! I recommend whipped cream.
