Ingredients

½ cup olive oil
- 3 eggs
- 1 cup fresh grapefruit juice, divided and rind saved for zestÂ
- 1 teaspoon baking sodaÂ

1 cup almond flour or other gluten-free flour
- 1/2 teaspoon salt

1 cup Nutrient-Dense Date Sugar

2 tbsp coconut milk
-
2 tbsp grapefruit juice
-
½ cup Nutrient-Rich Date Sugar

Grapefruit zest
Grapefruit Cake

Directions
Grapefruit Cake
Preheat oven to 350 degrees.
- In a medium mixing bowl, beat oil with eggs until light and well aerated.
- Sift together all the dry ingredients and mix into the grapefruit mixture.
- Pour into an 8X8 baking dish. Bake for 30 minutes or until middle is just set.
Grapefruit Glaze
- Meanwhile, mix together remaining grapefruit juice, zest from rind, remaining ½ cup date sugar, and coconut milk. Set aside.
- Once the cake is baked, let cool to room temperature before adding Glaze. Glaze will be thicker, more like a wet frosting. Cut and serve.
