This is my favorite ice cream flavor, and it's so easy to make! You don't need an ice cream maker and you only need six ingredients! This recipe is also vegan and non-dairy, and refined sugar free!

Ingredients

1 cup raw cashews
- 2 cups coconut cream
- â…” cup date sugar

1–2 tsp mint extract (to taste)
- 1 tbsp matcha powder

½ cup refined sugar free non-dairy dark chocolate chips
- 1 ½ tsp salt (optional)
- 2 tsp vanilla extract (optional)Â
Directions
Soak your raw cashews for 3–5 hours.
- Blend all ingredients together (except the chocolate chips) until completely smooth and no cashew bits remain.
- Pour into a bread pan and freeze for an hour (or until semi-solid), then stir in chocolate chips.
- Freeze for 2–4 more hours or overnight.
- Thaw for 10 minutes before serving, and enjoy!
