These gummy bears are sweet and delicious and packed with nutrients, protein, and amino acids. What more can you ask for in a nostalgic treat? I hope you enjoy them as much as we did!

Ingredients

1 cup fruit (cherries, blueberries, raspberries etc)

½ cup water (split)
- 1 TBSP fresh squeezed lemon juice
- 2 TBSP date syrup
- 4 tsp unflavored gelatin or agar agar
Directions
Puree the fruit in a food processor until smooth
- Place ¼ cup of the water into a bowl, and sprinkle the gelatin evenly over the water. Set aside and allow the gelatin to bloom.
- Combine the puréed fruit, ¼ cup water, lemon juice, and date syrup in a saucepan over medium-low heat. Stir with a whisk constantly.
- Once the mixture is simmering, add the bloomed gelatin and stir until combined. Do not stop stirring until the gelatin is completely melted and combined and the mixture is hot again (but not boiling.) The mixture should look glassy and smooth, do not overheat or the gummy bears may not set properly.
- Once the mixture is combined through, remove from the heat and pour it through a fine mesh sieve to remove any chunks or fruit or gelatin. Remove any bubbles on the top with a spoon.
- Place your gummy molds of choice on a cookie sheet. Pour or dropper the mixture into the mold and place the pan into the fridge for a minimum of 6 hours.
Once the gummies are set, carefully pop them out of their mold and set aside. They can be stored in the fridge or enjoyed right away!
