No Bake Granola Bars

Breakfast Cookies Sweet

This quick & easy no-bake granola bar recipe is a keeper and sure to be used over and over! It was inspired from this recipe over at Chocolate Covered Katie.

Approx. 24 granola bars

2 cups gluten free quick oats

1/2 cup unsweetened shredded coconut

1/2 cup gluten free oat flour

1/2 tsp salt

1/3 cup chocolate chips

1/3 cup coconut oil, melted

1/3 cup date syrup

1 tsp vanilla extract

Simply mix all dry ingredients together and then add in wet ingredients until well combined. Oil an 8 or 9-inch dish and press mixture in very firmly using wax paper. The more firmly you press the mixture, the better the bars will hold together! Refrigerate for at least 1 hour to give the coconut oil a chance to firm up. Store in refrigerator for up to 2 weeks - if they last that long!
