These guilt-free date caramels are refined sugar free, made using date paste as the base. It has all the caramelesque sweetness of dates, moderated by a slight touch of sea salt and a slight nutty flavor, and only needs three ingredients to make! Can you guess what they are?

1 â…” cup Recipe-Ready Date Paste
- ¼ cup tahini or peanut butter
- Pinch of salt
Directions
Soften your date paste by microwaving it for 30–60 seconds in 15-second increments, pausing every time to check for softness and making certain it doesn’t burn.
- Add all your ingredients to a food processor, blender, or bowl, and mix until well-combined.
- Press into a parchment-lined loaf pan and tamp down until flat.
- Freeze for 30 minutes or refrigerate for two hours.
- Slice into small rectangles, as big or small as you like.
- Wrap your rectangles into small pieces of parchment paper and refrigerate in an airtight container for 3–6 months.
