I gave this date-sweetened molten chocolate lava cake to a coworker, and he said it was the most amazing dessert he had ever had and asked me to make another one for him! I didn't, but I took note of his high praise, considering how he didn't always like what I made.
This recipe is refined sugar free, sweetened only with Nutrient-Rich Date Syrup and featuring Sugar-Free Chocolate Chips (sweetened with stevia) from Pascha Chocolate.

Ingredients
- 2 tbsp butter
- 3 large eggs
- 1 tsp vanilla extract
- ¼ cup milk
- 2 tbsp Nutrient-Rich Date Syrup
- ¼ cup almond flourÂ
- ½ tsp baking powder
- A pinch of salt

2–3 squares of dark chocolate bar
Directions
Preheat the oven to 350ºF and grease two large ramekins with butter.
- Melt dark chocolate with butter in a microwave-safe bowl in 30-second increments for 60–180 seconds and allow to cool.
- Whisk the egg, milk, date syrup, and vanilla together in a separate bowl.
- Gradually combine the chocolate-butter mixture with the other wet mixture until well-combined.
- Finally, sift your flour, baking powder, and salt into the mixture, whisking constantly.
Pour the cake mixture into two to three ramekins and press down a chocolate square into the cake batter in each ramekin until they are both submerged.
- Bake for 12–15 minutes or until the edges look set but the middle jiggles when you shake it slightly.
- Let the cakes sit for about five minutes to cool, then enjoy with a bit of whipped cream or whatever you’d like!
