These cinnamon apple ring pancakes are cinnamony and appley and taste delicious. What you need is a stack of five of these topped with whipped cream and cinnamon, drizzled richly with date syrup on a chilly autumn day. That is the definition of happiness.

Ingredients

1 ½ cups all-purpose flour
- ¼ cup Nutrient-Dense Date Sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 ¾ cups buttermilk
- 2 eggs
- 3 tbsp melted unsalted butter
- 1 tsp vanilla extract
Directions
Whisk together dry ingredients.
- In a separate bowl, whisk together wet ingredients.
- Mix the wet into the dry until well-combined.
- Use â…“ cup of batter per pancake, using a buttered pan and medium to low heat to avoid burning.
- Flip pancakes over once edges are not sticky to the touch, the bubbles have surfaced, and the bottom is a golden brown color, about 2.5 minutes.
- Enjoy with a sprinkling of cinnamon and a drizzle of date syrup and a dollop of whipped cream!
