Christmas Tree Date Bark is the incarnation of peanut buttery, date caramelly, dark chocolatey, chopped peanutty, and (optionally) pepperminty goodness, all in a single dessert. Unless you are allergic to peanuts or clinically insane, you will really, really, really not want to pass this one up. (If you do happen to be allergic to peanuts, feel free to leave them out.)

Ingredients

30–45 Organic Date Lady Dates (pitted)
- ¼ cup creamy peanut butter
- â…› cup chopped peanutsÂ

â…” cup sugar-free vegan dark chocolate chips, melted

¼ cup vegan white chocolate chips, melted (optional)
- ½ tsp peppermint extract (optional)Â
- 1 tbsp coconut flakes (optional)
Directions
Tamp down your pitted dates with their inside facedown in the shape of an evergreen tree. To make the shape absolutely perfect, feel free to tamp the pitted dates in a piping bag.
- Slather peanut butter over that (or spoon it into one side of your piping bag, if you are using one), and flatten the layer as well as you can.
- Sprinkle chopped peanuts over the peanut butter-slathered side.
- Freeze your Christmas tree.
- Meanwhile, melt your dark chocolate via a double boiler, optionally adding peppermint extract after you take it off the stove.
- Put your melted dark chocolate in a piping bag with a simple, round tip and ice it onto your frozen Christmas tree (being sure to remove the piping bag before doing so)Â in zig-zagging parallel lines, all the way down until the entire tree is covered in dark chocolate.
- Optionally, sprinkle coconut flakes over your Christmas tree for a little bit of snowishness, and allow your dark chocolate layer to harden, then (also) optionally, add melted vegan white chocolate to a piping bag and make tiny little white stars on the dark chocolate or a white garland—whatever you’d like!
Finally, chop up and enjoy!
