5-Ingredient Fluffy High-Protein Waffles

These 5-ingredient high-protein waffles are also gluten-free and refined sugar-free, although if you don't like oat flour, you can 100% use all-purpose flour instead. If you make mini waffles (like I did) you would get about 12–15 grams of protein per waffle and 21–25 grams of protein per regular waffle.

Ingredients

½ cup oat flour

½ cup nutrient-dense date sugar
- ½ cup protein powder
- 1 cup cottage cheese
- 6 eggs
Directions
Add all ingredients to a blender and blend until smooth. (You can use a mixing bowl instead if you’d like, but the mixture will be a bit rougher due to the cottage cheese.)
- Break out your waffle or mini waffle maker! For mini waffles, use about ½ cup of batter. For regular-sized waffles, use about ¾ cup.
This should amount to about 3–4 regular-sized waffles and 6–8 mini waffles.
- Serve with berries, whipped cream, and date syrup. Enjoy!
