This recipe makes a delicious, hearty cookie that's perfect on a fall day with a warm cup of coffee, or for kiddos after school.

Ingredients

4½ cups oats (we used gluten free)

1½ cups peanut butter

½ cup unsalted butter or coconut oil, softened

3 large eggs

1 Tbsp vanilla extract

1 tsp baking soda

¼ tsp sea salt

3/4 cup dark chocolate chips or chunks

Optional: 1/2 cup M&M's
Directions
Simply mix all ingredients with exception of chocolate chips, together until well combined. A stand mixer is best for monster cookies as the batter will be thick.
Add in chocolate chips and bake at 350°F for approximately 17 minutes.
