These Vegan Caramel Ice Cream bars are SO delish. They have two layers: an ice cream layer and a caramel layer. The ice cream layer's base is cashew (so this is both dairy-free and vegan) and the caramel layer's base is date paste. Added to the mix are chopped nuts for a lovely bit of crunch. You will scream for happiness after making this. I 100% recommend.

Ingredients

2 cups raw cashews soaked & drained
- ¾ cup coconut milkÂ

â…“ cup Nutrient-Dense Date Sugar
- 1 tsp vanilla extract

¼ cup nut butter

¾ cup Nutrient-Rich Date Paste
- ¼ cup coconut oil
- ¼ tsp salt
- ½ tsp vanilla extract
- 1–2 tbsp water (as needed)

1 cup roasted and chopped cashews or peanuts

300 grams of dark chocolate

Directions
Blend ice cream ingredients until smooth.
- Pour into a loaf pan lined with parchment paper. Freeze.
- Blend caramel ingredients, adding water one tablespoon at a time as needed.
- Spread on top of the ice cream layer.
- Sprinkle chopped cashews over the top and press in lightly.
- Freeze overnight.
Slice into bars, coat in melted chocolate and chill for thirty minutes or until chocolate is hard.
Serve later or immediately and enjoy!
