This recipe for refined sugar free Sweet Potato Pudding is the essence of autumn spice wonder, and will make you want to hug someone. Fair warning.

Ingredients

4–6 large sweet potatoes

4 tbsp butter
- 1 large egg

1/2 cup Nutrient-Rich Date Syrup

1/4 cup milk
- 1 tsp. sea salt
- 1 tsp. pure vanilla extract

1/2 tsp nutmeg

Whipped cream (optional)
Directions
- Boil potatoes until soft.
- Drain potatoes and transfer to a blender.
- Add the rest of the ingredients into the blender, blend, and transfer to an 8''x8'' baking dish.
Bake for 1 hr. 10 mins. at 350ºF, or until top is slightly brown.
- Transfer to bowls or ramekins and either serve immediately or chill for two hours.
- Top with whipped cream and a sprinkle of nutmeg before serving, if you so desire (it’s a very, very good idea).

Be careful with that recipe. You’re right! As much as I love sweet potatoes and dates, you may be hugged a lot. Lol. Thanks. Can’t wait to try it
