Ingredients
-
1 heaping cup of softened Recipe-Ready Date Paste
- ¼ cup Nutrient-Rich Date Syrup
- ¼ cup creamy peanut butter
-
1 cup roasted, chopped, and unsalted almonds (optional)
- 1 ½ cup rolled oats
-
1 cup crushed freeze-dried strawberries
-
½ cup mini chocolate chips (optional)
Directions
Soften date paste via a double boiler or one or two 30–second sessions in the microwave.
- Toast your oats and almonds (if raw) in a 350ºF oven for 10–15 minutes.
- Place oats, date paste, date syrup, and almonds in a large mixing bowl and set aside.
- Warm peanut butter in a saucepan over low heat (or for 30–60 seconds in the microwave) until you reach a more pourable consistency. Add to the mixture.
Add in your chocolate chips and freeze-dried strawberries, mix everything together until well-combined, and put in a parchment-lined 8 x 8 baking pan.
- Press everything down firmly with a drinking glass, cover with parchment paper or plastic wrap and allow it to firm up in the freezer or refrigerator for 15–20 minutes.
- Take it out of the freezer or refrigerator, remove it from the pan, and cut it into ten bar-shaped pieces.
Enjoy immediately or store in the refrigerator for up to a few days in an airtight container.
