Ingredients
3/4 cup date paste
3/4 cup water
1/4 cup butter, softened
2 eggs
1/2 teaspoon salt
1 cup GF flour
1 teaspoon baking powder
1/2-3/4 cup coconut date sauce, depending on sweetness level (microwaved 20 sec)
Directions
Preheat the oven to 350F degrees.
Place hot water and date paste in a blender and blend until smooth.
In a mixing bowl, beat butter until fluffy. Whisk in eggs, salt, and date paste until creamy.
Sift in flour and baking powder and mix together.
Grease a 9X9 baking dish and pour batter in. Bake for 25 minutes or until toothpick comes out almost clean.
Remove from the oven. Using a toothpick, immediately poke holes all over the top.
Drizzle with hot coconut date sauce and bake for 5 more minutes. Serve with whipped cream and extra coconut date sauce.
