Imagine your favorite comfort meal, grilled cheese, with an out of this world twist: balsamic date caramelized onions. We can already smell a new favorite. Pair this masterpiece with your favorite soup. Now we're talkin'.
Ingredients

1 medium yellow onion
- 4 tablespoons salted butter
- 1/4 cup date paste, cut into small cubes
- 2 teaspoons balsamic vinegar
- 8 oz brie cheese (or sub favorite cheese)
- 6 slices sourdough bread
Directions
Peel onion and slice in half, then cut into thin slices.
Place in a medium skillet with 1 tablespoon butter. Cover and cook until translucent and golden brown in color, about 15 minutes.
Add date paste and vinegar, pressing down and stirring until paste is melted. Set aside.
Place brie on three pieces of bread and date caramelized onions on the other 3 pieces.
Fold together and generously butter each side of the bread with remaining butter.
Heat skillet and press sandwiches down firmly. Cover and cook on both sides until golden crisp in color and cheese is melted. Slice in half to serve.
