High-Protein Copycat Twix Bars

These beautiful Twix bars have a caramel and shortbread layer, which together will make you want to die of happiness. They are to-die-for, and I am almost not kidding. Even cooler is that they pack a protein punch and are sweetened with Nutrient-Rich Date Syrup!

Ingredients

1 ½ cups almond flour

¼ cup + 2 tbsp vanilla or plain protein powder

3 tbsp Nutrient-Rich Date Syrup

3 tbsp melted coconut oil

- 2 tbsp coconut oilÂ
- ¼ cup collagen peptides
- 1 tsp pure vanilla extract

2 cups dark chocolate

1 tbsp melted coconut oil

Directions
Combine the shortbread ingredients and press the mixture into a bread pan lined with parchment paper. Place the dish in the freezer while preparing the caramel layer.
- In a bowl, mix together the drippy nut butter, syrup, vanilla, coconut oil, and collagen until smooth.
- Pour the caramel mixture over the shortbread layer and freeze for at least 1 hour.
- Melt the chocolate and coconut oil. You’ll have extra, but make enough to fully coat the bars.
Cut the set mixture into 14–18 bars.
- Dip each bar or square into the melted chocolate, letting the excess drip off before placing them on parchment paper.
- Optionally, sprinkle with flaky sea salt.
- Freeze for an additional 10 minutes to let the chocolate harden.
- Enjoy! Store the bars in the fridge.
