These coconut bounty truffles are absolutely scrumptious, with their lovely white chocolate coating and soft, coconutty shell. I dare you to eat one, just ONE. You can't do it. I know you can't.

Ingredients

2 cups desiccated coconut
- 2 cups almond flour
- â…” cup full-fat coconut creamÂ
- ½ cup whey vanilla protein powder

3 tbsp Nutrient-Rich Date Syrup
- 200g white chocolate, melted
- 1 tbsp coconut oil (optional)
Directions
Mix the first three ingredients together, then roll them into balls.
- Pop into the freezer for 10–15 minutes.
- Meanwhile, melt your chocolate via a double boiler (optionally, with coconut oil). Mix until smooth.
- Coat your coconut balls in melted chocolate, place them on a parchment-lined baking tray, then top them with a bit of desiccated coconut and freeze for 15 minutes.
- Enjoy later or immediately!
