Easy High-Protein Peanut Butter Mousse

Ingredients
- 350 grams silken tofu
- ¼ cup peanut butter
- ¼ tbsp Nutrient-Rich Date Syrup
- 1 tsp vanilla paste or extract
- 100 grams dark chocolate
- Coconut cream (the solid part on the top from a refrigerated can)
Directions
- Add tofu, peanut butter, date syrup, and vanilla paste to a blender and blend until smooth.
- Spoon into ramekins or jars, then refrigerate.
- Melt dark chocolate and coconut cream together in a double boiler and mix until smooth.
- Pour over mousse in the jars or ramekins to form a thin layer, then refrigerate for an hour.
