Ingredients

3 cups cassava flour
-
2 cups old fashioned rolled oats

1 cup date sugar

1/2 cup date syrup, divided

2 tsp salt, divided

1 cup ghee (226 grams)(8 ounces)

1/2 cup coconut manna (113 grams) (4 ounces)

1 lb date paste
-
1/2 tsp vanilla extract

1 cup chocolate chips
Directions
Preheat oven to 350F. Line 9x13 pan with parchment paper.
Combine cassava, oats, date sugar, 1/4 cup date syrup and 1 tsp salt in bowl. Add ghee and coconut manna, stirring until evenly moistened. (Dough will resemble wet sand.)
Set aside 1/3 of dough for crumble topping.
Press remaining mixture into bottom of prepared pan.
Mix dates, 1/4 cup date syrup, vanilla and 1/2 tsp salt together. Add chocolate chips.
Spread mixture evenly over pressed dough.
Crumble reserved dough over top then press gently down.
Bake until top is golden brown, about 35-40 minutes. Let cool for 30 minutes before cutting into squares.
Recipe Note
3 sticks of unsalted butter can be substituted for ghee & coconut manna.
