This cookie is fabulous by itself with tea or coffee and double fabulous with Date Lady Chocolate Spread sandwiched in between them!
1. Mix ingredients until well combined. Use scoop or roll dough into 1-inch balls and then flatten gently with spatula or bottom of jar until flat and evenly spread.
2. These cookies will burn easily, and bake best on parchment paper, a Silpat mat or baking stone. A well-greased cookie sheet can be used, but you may want to cut baking time by a few minutes.
3. Bake at 325°F for 13-15 minutes. Let cool completely.
Optional: Spread Date Lady Chocolate Spread on flat side of one cookie. Top with another cookie so to create a double stack, or cookie sandwich. Garnish with toasted nuts or Date Lady Date Sugar and cinnamon if desired!
