This recipe is so easy and makes for a delicious and hearty cookie. It is absolutely delicious without M&M's, but if you are looking for the original Monster Cookie, go ahead and add them in!
4 1/2 cups oats (we used gluten free)
1 1/2 cups peanut butter
1 cup Date Lady Pure Date Syrup
1/2 cup unsalted butter, softened
3 large eggs
1 tablespoon vanilla extract
1 teaspoons baking soda
1/4 sea salt
1 cup dark chocolate chips or chunks
Optional: 1 cup M&M's
Simply mix all ingredients with exception of chocolate chips, together until well combined. (Hint: A stand mixer is the bomb for monster cookies as the batter will be thick!) Add in chocolate chips and bake at 350 for approximately 15 minutes.
