This delicious paleo cookie recipe was inspired by the Delighted Momma! The date syrup is a great compliment to the coconut and chocolate, which provide a fantastic texture in this cookie!
1 cup coconut flour
1/2 cup butter or coconut oil, melted
1/4 cup date syrup
1/2 tsp vanilla extract
1/8 tsp sea salt
1/2 cup shredded, unsweetened coconut
3/4 cups dark chocolate chips (we like Enjoy Life)
In a large bowl, mix together the melted butter (or coconut oil), date syrup, eggs, vanilla extract and sea salt. Stir in the coconut flour, shredded coconut and chocolate chips. Roll into 1-inch balls and place on a greased baking sheet or Silpat. Flatten gently to give a uniform cookie shape. Bake for 12 minutes at 375. Enjoy!
