Paleo Banana Muffins

Breakfast Gluten Free Paleo

This recipe was inspired from the book "Primal Cravings" and is sure to please anyone in your family, paleo or not!

1 cup date sugar

1 cup coconut flour

3/4 cup tapioca flour

2 tsp baking soda

1 cup coconut oil or butter, melted

4 ripe mashed bananas

8 eggs

2 tsp vanilla extract 1 cup chopped pecans or walnuts

Mix dry ingredients together, set aside. Mash bananas in a large mixing bowl and then add in the eggs until well combined. Quickly mix in vanilla and eggs. Gently combine the dry ingredients with wet ingredients. Pour into greased muffin tin or muffin liners and bake at 350 for 20 minutes.
