This paleo cupcake is moist, delicious and very simple to whip together. Perfect for a birthday party or get together -- your guests will rave!
For 8 large or 12 small cupcakes:
1/2 cup date sugar
1/4 cup coconut flour
1/4 cup tapioca flour
3 TB cocoa
1 tsp baking soda
1/2 cup melted butter
1/2 cup date syrup
Optional frosting - Date Lady Chocolate Spread
Mix dry ingredients together. Add in eggs, melted butter and date syrup just until well combined. Pour into greased muffin tin or liners. Bake at 350 for approximately 20 minutes. For an easy, delicious and fully paleo icing, we recommend Date Lady Chocolate Spread!
