Easiest Gluten Free Cookie Ever

Gluten Free Paleo Sweet Vegan

This cookie is fabulous by itself with tea or coffee and double fabulous with Date Lady Chocolate Spread sandwiched in between them!

2 cups almond flour

1/4 cup date sugar

1/2 cup date syrup

dash of sea salt

Optional Mix-ins: 1/4 cup shredded coconut or dark chocolate mini chips

Mix ingredients until well combined. Use scoop or roll dough into 1-inch balls and then flatten gently with the bottom of a jar or other object until flat and evenly spread. These cookies will burn easily, so they will bake best on parchment paper, silpat or baking stone. A well-greased cookie sheet can be used if one of those options is not available. In that case, you might want to bake for a couple minutes less than the recommendation.

Bake at 325 for 13-15 minutes. Let cool completely.

Optional Finish: Spread Date Lady Chocolate Spread on the flat side of one cookie. Top with another cookie so that you create a double stack, or cookie "sandwich" so to speak. Garnish with toasted nuts or date sugar and cinnamon if desired!
