One Bowl Cornbread

This one bowl cornbread is simple; a nice cross between the old-fashioned and the sweet boxed brand everybody loves. It's sweetened with date syrup & gluten free. Enjoy with baked salmon, chili and other favorites. For an extra special cornbread (and our favorite rendition of the recipe!), use blue cornmeal in place of yellow cornmeal.

3/4 cup buttermilk

1/2 cup butter or coconut oil, melted

1/2 date syrup

2 eggs

1 cup cornmeal

1 cup gf flour (we used 1/2 c sorghum flour + 1/2 c GF oat flour)

1 tsp baking soda

1/2 tsp salt

Whisk together wet ingredients. Add dry ingredients all at once and stir just until blended together evenly. Pour into 9-in greased baking dish and bake at 375 for 25 minutes.
